Vegan Blueberry Donuts
I seem to always have a stock of frozen fruit in. I'm always making smoothies or brownies with them, and I went through a phase (who remembers?) of making donuts on the regular, so I figured why not have a go at combining the two?! That is how I landed on these vegan blueberry donuts - soft fluffy dough with a fruit surprise, what's not to love?!
I understand that the way I make donuts may not be the traditional way, instead of deep frying them in oil I choose to bake them. Being fully honest with you, the reason I do this is because I really really do not like frying things. I hate how to oil spits, how much waste comes from using a big glob (is that a word?) of oil and just the overall smell it fills your kitchen with. Don't get me wrong, I do enjoy a donut from a proper bakery (when I can find the Co-op vegan ones!) that has been fried, but I find these baked donuts so much easier to make and just as delicious.

- 170g Plain Flour
- 1 Tbsp Baking Powder
- 1/4 Tsp Bicarbonate of Soda
- 50g Caster Sugar
- 150ml Dairy-Free Milk
- 1 Tsp Vanilla Extract
- 1 Tsp Lemon Juice
- 100g Frozen Blueberries
- 100g Icing Sugar
- 25ml Cold Water
- Preheat your oven to 180ยบ celsius. If necessary, grease your donut pan (I Used these silicone ones, so no greasing was necessary!).
- Mix all the dry ingredients in a large mixing bowl.
- Fold in the milk, vanilla extract and lemon juice, stirring lightly until combined.
- Stir through the frozen blueberries.
- Transfer your mixture to a piping bag - top tip, put your piping bag into a pint glass, then fill it up, this makes it easier to pour the mixture in!
- Pipe the mixture into the donut pan, filling each donut hole about half full.
- Bake for 12-14 minutes, until the donuts have risen and turned golden.
- Leave to cool in the pan for a few minutes, then transfer to a cooling rack, turning the donuts over so the bottom side doesn't get soggy as they cool.
- When the donuts are fully cooled begin making the icing. Sieve the icing sugar, then stir in the water and mix until a smooth, thick icing is formed (you may not need all the water, just add it in gradually!).
- Drizzle the icing over the donuts and enjoy!
