Vegan Oreo Cake
I made a cake very similar to this over 4 years ago for a friends birthday. At the time I wasn't vegan so obviously it was riddled with non-vegan ingredients. Recently I was having a brainstorm of things that I've made in the past that I wanted to "veganise". This Oreo cake came to mind, as Oreos are one of those "accidentally vegan" foods, and then I'd just need to make a chocolate cake and use the readily available vegan butter and dairy free milks that are everywhere nowadays.
This cake is very sweet, and that's coming from someone who was once a self-proclaimed sweet addict. So this is definitely a luxurious treat that would make a perfect celebration cake for a birthday.

- 200g Dairy Free Butter
- 200g Soft Light Brown Sugar
- 350g Self Raising Flour
- 1 Tsp Baking Powder
- 70g Cocoa Powder
- 400ml Dairy Free Milk
- Oreo Icing X
- 160g Dairy Free Butter
- 500g Icing Sugar
- 2 Tbsp Dairy Free Milk
- 1 Pack of Oreos (154g), crushed
- 10 Oreos of your own choice (I used double stuffed and mint flavoured)
- Preheat your oven to 180˚ celsius. Grease and line two 7-inch round cake tins.
- In a large mixing bowl, beat the butter lightly until softened, then mix with the sugar until light and fluffy.
- Gradually fold in the flour, baking powder and cocoa powder.
- Stir in the milk to form a smooth batter.
- Divide the mixture equally between the two cake tins.
- Bake for 30 to 35 minutes until the cakes are risen and a skewer inserted in them comes out clean.
- Leave to cool in the tins for a few minutes, then transfer to a cooling rack to cool completely.
- To make the icing, lightly beat the butter, then gradually add the icing sugar (a little at a time), folding to fully combine.
- Add enough milk to make a smooth icing.
- Fold in the crushed oreos.
- To assemble the cake, place one cake on a plate, then top with half the icing. Place the other cake on top and top with the remaining icing.
- With the 10 oreos, cut a third of the oreo off, then place the oreos on top of the cake in any fashion you believe looks good.
- And your cake is done, enjoy!
