Rice Paper Wraps
I started a new job last week, and with it being New Year as well I wanted to try new things and get into a better habit of eating healthy (mostly..). This led to me brainstorming things which I could take for lunch that didn't necessarily need heating up (the microwave queue can be terrible!) and weren't too smelly. I remembered these spring rolls which I made a few months ago and had completely forgotten about!
I set about chopping up my veggies and soaking my rice paper wraps, then began rolling. I took these into work along with some sweet chilli sauce (defeating my efforts to be healthy haha) and they were a real treat when everyone around me was eating salads and sandwiches 😄 This is a really simple recipe, only a little time consuming for the assembly of the rolls. Feel free to use and vegetables that you want, I just used what I had in at the time 😅 You could add avocado, coriander, beansprouts, anything you fancy!
Total time: 30 Minutes
Yield: 8 Rolls, dependent on the rice paper size
Ingredients
- 50g Vermicelli Rice Noodles
- 1 Carrot (peeled)
- 1/3 of a Cucumber
- 1/2 a Bell Pepper (I used red and yellow peppers)
- Handful of Spinach Leaves
- 1 tbsp Sesame Seeds
- 3 Spring Onions
- 8 Rice Paper Wraps
- Cook the rice noodles in a pan of boiling water for 2 minutes until soft, then drain in a sieve and rinse with cold water to cool them.
- Prepare your vegetables (excluding the spinach) by cutting them into small strips.
- Optional: Fry the bell pepper and carrot with a little garlic and chilli, then leave to cool before assembling the wraps.
- To assemble, begin by soaking one rice paper wrap at a time in a dish (it must be big enough to fit the whole rice paper) of warm water for 30 seconds. Transfer this to a plate, place spinach on the centre of the wrap then top with a handful of rice noodles, vegetables and sesame seeds. To fold, fold each of the edges in then tightly roll up the rice paper wrap from the bottom. Transfer to a separate plate and continue with the remaining ingredients.
