Vegan Wagon Wheels
A wagon wheel is a classic British treat, and something that I haven't had since I went vegetarian 3 years ago. Unfortunately, standard marshmallows contain gelatine, so therefore not suitable for vegetarians (or vegans!). Luckily for us though there are now vegan marshmallows available to buy, and all you need is some jam, biscuits and chocolate and you can make your own!
I don't this fully class as a recipe, more of a step-by-step instruction as they're really not that complicated to make! They're a little fiddly, especially the dipping in chocolate part - but once you manage that and leave them to set you're left with beautiful, homemade vegan wagon wheels!

- 200g Dark Chocolate (Vegan - I use Bourneville)
- 8 Digestive Biscuits (Vegan - I use Marks and Spencer)
- One pack Vegan Marshmallows (I used Freedom Mallows Vegetarian Marshmallows Vanilla)
- Jam (I used strawberry)
- Heat your oven to 180˚ celsius and line a baking pan.
- On half your biscuits, arrange the marshmallows so they cover the biscuit (for reference, I used 6 Freedom Mallows per biscuit).
- Heat the marshmallow covered biscuits in the oven for around 5 minutes, until the marshmallows are softened and beginning to melt.
- Spread the jam thinly across the other half of your biscuits, then arrange these on top of the melted marshmallow biscuits, pressing down lightly to squish them together.
- Leave these to sit for around 5-10 minutes, so the marshmallows can set.
- Whilst these are setting, melt your chocolate in a bowl.
- Dip the biscuits into the melted chocolate, spooning the chocolate around the biscuits so they're fully coated.
- Transfer the wagon wheels to a tray lined with non-stick paper or a silicone mat.
- Leave these to cool in the fridge until they are fully set, around 30 minutes - then enjoy!
