Vegan Gluten Free Pancakes (Three Ingredients)
Continuing on with my adventures in gluten free cooking, I've successfully made vegan, gluten free pancakes! This is a super easy recipe that makes light and fluffy pancakes and they make the perfect Sunday morning breakfast treat. My mornings normally consist of porridge or toast, so when I get the chance I love to splurge and make myself something more indulgent like this.
This is a totally foolproof recipe - and if you don't have access to a blender you could substitute in whole-wheat flour and mash the banana then whisk everything together. I love everything about this recipe. The low number of ingredients, how simple the ingredients are, and how versatile this recipe is. You can substitute in whatever you feel like as toppings, add the chocolate chips or even blueberries into the batter pre-frying. And most importantly, they turn out perfectly every single time! That's what you want from a pancake recipe!!
Oats are such a versatile ingredient and they're great when you want to make things gluten free - there is some debate over whether they are gluten free but they do tend to be safe for people with gluten intolerance. Obviously if you're seriously intolerant I would suggest using gluten free oats that have definitely not been processed in the same factory as items containing gluten.

Yield: 5 Medium Sized Pancakes
Ingredients
- 120g Oats (1.5 cups)
- 250ml Dairy Free Milk (1 cup)
- 1 ripe Banana
- 1/2 tsp Vanilla Essence (optional)
- Pulse the oats in a blender for a few seconds until an oat flour is formed (I used my Nutribullet)
- Add the plant milk, banana and vanilla essence (if using) and blend it again for a few seconds until a smooth batter is formed.
- Heat a little oil in a frying pan, then pour about 2 tbsp of mixture onto the pan and smooth it out into a circle.
- Fry for a few minutes on one side until bubbles appear then flip over to cook the other side.
- Set this pancake onto a plate then repeat with the remaining mixture.
- Top the pancakes with some chocolate chips and syrup, or fruit if that's your thing!
