Vegan Cinnamon Donuts With A Chocolate Glaze
Everywhere I look on social media I seem to be seeing donuts. This must have got to my subconscious because I found myself browsing Amazon looking for donut pans. These cinnamon donuts with a chocolate glaze are the first donuts I've ever made (unless you count my failed attempt at making donuts in home economics when I was 12...) and I am SO pleased with how they turned out!
After browsing through Amazon, I settled on these silicone donut pans, and I am honestly so please with them. The best bit about them is that with them being silicone you don't need to grease the pan at all and the donuts donut (see what I did there?) get stuck!
Now obviously these donuts are baked rather than the traditional deep fried donuts. Whilst this may mean they're not your traditional donuts, this does mean they're a heck of a lot less greasy! They're also so much easier to make, being able to just pop them in the oven for 15 minutes rather than having to deal with hot oil, frying and the mess involved.
I settled on cinnamon donuts, as I felt they were a pretty traditional flavour. Of course I had to top them with chocolate - what is without chocolate?!

- 170g Plain Flour
- 1 Tbsp Baking Powder
- 1/4 Tsp Bicarbonate of Soda
- 1 Tsp Ground Cinnamon
- 50g Caster Sugar
- 150ml Dairy-Free Milk
- 1 Tsp Vanilla Extract
- 1 Tsp Lemon Juice
- 180g Icing Sugar
- 20g Cocoa Powder
- 50ml Cold Water
- Preheat your oven to 180ยบ celsius. If necessary, grease your donut pan (I Used these silicone ones, so no greasing was necessary!).
- Mix all the dry ingredients in a large mixing bowl.
- Fold in the milk, vanilla extract and lemon juice, stirring lightly until combined.
- Transfer your mixture to a piping bag - top tip, put your piping bag into a pint glass, then fill it up, this makes it easier to pour the mixture in!
- Pipe the mixture into the donut pan, filling each donut hole about half full.
- Bake for 12-14 minutes, until the donuts have risen and turned golden.
- Leave to cool in the pan for a few minutes, then transfer to a cooling rack, turning the donuts over so the bottom side doesn't get soggy as they cool.
- When the donuts are fully cooled begin making the icing. Sieve together the icing sugar and cocoa powder, then stir in the water and mix until a smooth, thick icing is formed.
- Spoon the icing onto the donuts carefully, topping with sprinkles if you want (I was quite enjoying the shiny plain look, but it's whatever you fancy!).
