Vegan Orange Biscuits
Now that we're getting into Autumn I thought it was time to start on the more seasonal flavours, such as cinnamon, ginger and orange! That's where this idea for these Orange Biscuits came from. If you love oranges and buttery biscuits with a sweet icing then these are the biscuits for you. These biscuits are refreshing and add a bit of seasonal cheer - a perfect tea-time treat!
I don't know about you, but I really love this time of year. It's getting close to Christmas, wrapping up in a blanket all day becomes acceptable and getting to start the autumn/winter seasonal baking is the cherry on top (pun intended)!

Yield: 14 Biscuits
Ingredients
- 125g (1/2 Cup) Vegan Butter
- 60g (1/3 Cup) Caster Sugar
- 180g (1.5 Cups) Plain Flour
- 1/2 the Zest of One Orange
- 1 Tsp Orange Juice (fresh from the orange you used for zest)
- 45g (1/3 Cup) Icing Sugar
- 1/2 Tbsp Orange Juice (fresh)
- Orange Zest, to decorate
- Beat together the butter and sugar, then stir in the orange zest and juice.
- Fold in the flour a little at a time - the mixture will begin to resemble bread crumbs.
- Gently knead the dough in the bowl until it comes together to form a solid dough, mould this into a ball and transfer to a tupperware container and place in the fridge for 45 minutes. (Chilling the dough will make it easier to handle when cutting the shapes).
- Preheat your oven to 180˚c and prepare a baking tray with either greaseproof paper or non-stick silicone sheets like I use!
- Flour a clean surface, then roll the dough out until it's around half a centimetre thick.
- Cut out your dough using a 1.5inch circular cookie cutter.
- Bake the biscuits for for 12 minutes, or until they are beginning to turn golden.
- Leave the biscuits to cool completely on a wire rack.
- To make the icing first sieve the icing sugar into a bowl, then gradually add the orange juice to make a smooth icing. You may not need the full amount of orange juice, just add enough so that the icing is smooth but not too runny.
- Spoon the icing onto the cooled biscuits and smooth it down, then sprinkle on some orange zest and leave to set.
