Vegan Mint Chocolate Chip Donuts
If you've read my blog before, you'll know I am getting really into making donuts (baked donuts that is) since purchasing these silicone donut pans. I love experimenting with new flavours, and seeing as mint and chocolate are up there with my favourite flavour combinations, it would be rude to not make it into a donut!
These vegan mint chocolate chip donuts went down a treat, even with my Dad who is not a big fan of mint. I styled them like mint chocolate chip ice cream, with the addition of dark chocolate chips on top giving it that little something extra. I could really do with some mint chocolate chip ice cream right now - as I'm writing this it's 10am and already 20˚ celsius, here in the UK that is very unusual and I am not used to the heat!
These donuts are a doughy (as they should be), minty and chocolatey wonder, great for a refreshing sweet treat. Go on, give them a go - you know you want to!

- 170g Plain Flour
- 1 Tbsp Baking Powder
- 1/4 Tsp Bicarbonate of Soda
- 40g Cocoa Powder
- 50g Caster Sugar
- 175ml Dairy-Free Milk
- 1 Tsp Lemon Juice
- 180g Icing Sugar
- A Few Drops Mint Extract
- 50ml Cold Water
- A Few Drops Green Food Colouring Gel
- 50g Dark Chocolate Chips
- Preheat your oven to 180ยบ celsius.
- If necessary, grease your donut pan (I used these silicone ones, so no greasing was necessary!).
- Mix all the dry ingredients in a large mixing bowl.
- Fold in the milk and lemon juice, stirring lightly until combined (use as much milk as you need to to make a smooth batter.
- Transfer your mixture to a piping bag - top tip, put your piping bag into a pint glass, then fill it up, this makes it easier to pour the mixture in!
- Pipe the mixture into the donut pan, filling each donut hole about half full.
- Bake for 12-14 minutes, until the donuts have risen.
- Leave to cool in the pan for a few minutes, then transfer to a cooling rack, turning the donuts over so the bottom side doesn't get soggy as they cool.
- When the donuts are fully cooled begin making the icing.
- Sieve the icing sugar, then stir in the water, food colouring and mint extract and mix until a smooth, thick icing is formed.
- Spoon the icing onto the donuts carefully, then top with chocolate chips.
