Vegan Cookie Dough Brownies (Brookies)
I've seen these floating around the internet for a few years, and decided I should try making them for myself. By these, I mean the most epic concoction ever created in the kitchen. Brownies topped with Cookies. YES. The glorious brownie, already a champion in it's own right, topped with the beautiful cookie, in all its chocolatey goodness.
I just used my regular recipes for cookies and brownies, but made sure to use a large pan with high edges, as I expected the mixture to rise quite a lot as it cooked, so definitely make sure to do that as it rose a lot I found out!

- 100g Dairy Free Butter
- 170g Caster Sugar
- 185g Self Raising Flour
- 30g Cocoa Powder
- 1 Tsp Baking Powder
- 150ml Dairy Free Milk
- 75g Dark Chocolate
- 100g Dark Chocolate Chips
- 100g Dairy Free Butter
- 75g Soft Light Brown Sugar
- 1.5 Tbsp Golden Syrup
- 100g Dark Chocolate Chips
- 175g Self Raising Flour
- Preheat your oven to 180˚ celsius. Line a 8-inch square pan with greaseproof paper.
- To make the brownies, begin by beating the butter and sugar together.
- Gradually add the flour, cocoa powder and baking powder.
- Melt the 75g of dark chocolate, then stir this into the mixture along with the milk.
- Fold in the chocolate chips then pour your batter into the square pan.
- To make the cookies, beat together the butter and sugar.
- Stir in the golden syrup and 3/4 of the chocolate chips.
- Fold in the flour gradually until a smooth batter is formed.
- Spread the cookie dough over the brownies slowly, so that the brownie batter doesn't mix too much with the cookie dough batter.
- Sprinkle over the remaining chocolate chips.
- Bake for 40 minutes, covering with foil (I didn't realise to do this :( ) so that the cookies don't brown too much. Leave to cool in the tin before cutting up into squares and enjoying!
