Vegan Chocolate and Banana Bread
This chocolate and banana cake is something I used to make all the time a few years ago. Since then I've cut out dairy and eggs, so I've had to improvise a bit in order to still make such a rich and tasty cake.
I adapted this recipe for my Vegan Banana Bread, which if you haven't already tried it you definitely should! I made this cake on a Saturday morning, went out for the day and by the time I got back it was gone! I'd like to imagine there were magic fairies who came and ate the cake, however in reality it was just my number one fans (and critics!) my family. This speaks volumes to how tasty it is though!

This recipe is adapted from my Vegan Banana Bread recipe, so if you're not feeling the chocolate (as crazy as that might be!), why not give that a try instead?
Total time: 1 Hour plus Cooling
Yield: 1 Loaf Cake
Ingredients
- 125g Dairy-free Butter
- 40g Demerara Sugar
- 60g Caster Sugar
- 3 Medium Bananas, Mashed
- 200g Plain Flour
- 50g Cocoa Powder
- 3 Tsp Baking Powder
- 65ml Dairy Free Milk
- 100g Dark Chocolate Chips
- 1 Banana, for decoration
- Preheat your oven to 180˚C and grease and line a 2lb loaf pan (I use these loaf tin liners).
- Beat together the butter and sugars in a large mixing bowl.
- Fold in the mashed bananas.
- Slowly mix in the flour, cocoa powder and baking powder, stirring until just combined.
- Add the milk to form a smooth batter.
- Stir through the chocolate chips, leaving a few aside to decorate the top of the cake.
- Pour the mixture into the loaf pan.
- Cut up your banana into slices, then arrange these on top of the batter along with the remaining chocolate chips.
- Bake for 45 minutes or until a digital thermometer inserted in the cake shows the temperature as 200˚F.
- Transfer to a cooling rack and leave to cool completely before slicing and serving.
