Marshmallow Snowmen Cupcakes (Vegan)
These super cute Marshmallow Snowmen Cupcakes are a perfect Christmas treat, and super cute! I used a dusting of icing sugar to make it look like a lovely little snowy scene and I'm so pleased with how they turned out ☺️

- 280g Plain Flour
- 95g Cocoa Powder
- 1 Tbsp Baking Powder
- 175g Light Soft Brown Sugar
- 325ml Dairy Free Milk (I used oat milk)
- 80ml Vegetable Oil
- 75-100ml Water (add a little at a time)
- 1 Tsp Vanilla Extract
- 100g Dairy Free Butter
- 185g Icing Sugar
- A Few Drops Vanilla Extract
- Icing Sugar
- Vegan Smarties
- Vegan Marshmallows
- Vegan Food Colouring
Cooking Directions
- Preheat your oven to 180 degrees celsius. Line a muffin tray with cases.
- Mix together the plain flour, cocoa power, baking powder and sugar. Stir in the dairy free milk and vegetable oil. Gradually add the cold water, enough to make a smooth batter. Mix in the vanilla essence.
- Spoon the mixture into the cases and bake for 15-17 minutes. Leave to cool completely before starting the icing.
- To make the buttercream, beat the butter lightly to soften it then gradually fold in the icing sugar, then stir through the vanilla extract.
- Spread the buttercream on top of the cooled cupcakes.
- For the decorations, use your food colouring to decorate the marshmallows to look like snowmen.
- Place the marshmallows on top of the buttercream, squishing them down into the icing, dust the cupcakes with icing sugar (to look like snow!), arrange the vegan smarties on top then enjoy!
