Honey and Banana Flapjacks - Non Vegan



I love flapjacks. The fact that they include oats means I can pretend I am being healthy by eating them - bonus! These flapjacks also include banana - double healthy bonus! I am also a huge fan of honey, so adding it to flapjack was inevitable. When I finally decided to make them, the resulting flapjacks were just oh so delicious! 




Flapjacks are so easy to make, and they make the perfect after dinner snack or lunch time treat! You are going to love these flapjacks because they have everything a flapjack should; buttery and chewy oats, with the addition of honey and banana to give the flapjacks a little something extra - they are truly delicious! These are also a great way to use up overripe bananas - there's really no excuse not to try them!


Honey and Banana Flapjacks


Total time: 1 Hour plus Cooling
Yield: 16 Flapjacks
Ingredients
  • 75g Butter (Room Temperature) (1/3 cup)
  • 2 Tbsp Honey
  • 75g Light Soft Brown Sugar (3/8 cup)
  • 1 Large Banana, Mashed
  • 200g Porridge Oats (2 cups)
Cooking Directions
  1. Preheat the oven to 180°C (fan oven). Grease and line a 6 inch square metal tin with greaseproof paper.
  2. Melt the butter, honey and sugar in a pan on a gentle heat until fully melted. Remove the pan from the heat then mix in the banana and the oats, folding the mixture until it is fully combined.
  3. Transfer the mixture to the tin, and press the mixture down, ensuring it is evenly distributed.
  4. Bake for 35 to 40 minutes until the flapjacks are golden brown. Cut the flapjacks into 16 squares, then leave to cool completely in the tin before transferring to a cooling rack.
  5. These flapjacks will keep for 5 days in an airtight container
