Easy Vegan Rocky Road
I would make Rocky Road all the time as a non-vegan, but turning vegan meant I couldn't use the same ingredients I was used to so it slipped to the end of my baking list and I focused more on mastering vegan cakes. Recently I decided enough was enough, and brainstormed what I could put into a vegan rocky road.
My original rocky road recipe features some non-vegan ingredients, such as Twix Bars and mini marshmallows (which are made using gelatin, a not very nice ingredient at all 😞). I know you can get vegan marshmallows, however I didn't have a store nearby that sold them and to be honest they can be very expensive so I focused on ingredients that were easily accessible and cheap!
It was actually pretty easy to vegan-ize (the technical term) this recipe, as I just used dairy-free butter instead of dairy butter, as I already used dark chocolate, golden syrup and rich tea biscuits which are all suitable for vegans! Be sure to check the ingredients of course, but most rich tea biscuits are accidentally vegan 😎I then had a browse around Tesco and found a packet of Jelly Tots, which are another accidentally vegan treat as they are made without gelatin - win! I also opted for these Fox's Mini Cookies, to replace the Twix biscuits I used to use.
You could use any variation of ingredients that you wish to, these are just my personal choices and what I had easily available! There are plenty of vegan options out there now, and if you are a fan of fruit in your rocky road then another good ingredient to add is glacé cherries, a normal ingredient in rocky road, I'm just not that big a fan of cherries!
I made this rocky road on a super sunny day, we had a mini heatwave in the middle of April here in the UK which was quite a treat although my silly self got a little sunburnt 😅I've been really enjoying iced lattes in this warmer weather, so if you fancy it I'll put up a recipe for a super simple recipe for a vegan iced latte!

Ingredients
- 100g Dairy-free Butter
- 300g Dark Chocolate (Broken into pieces) (I used Cadbury's Bournville which is accidentally vegan!)
- 3 Tbsp Golden Syrup
- 120g Rich Tea Biscuits (Broken into chunks)
- 150g Jelly Tots (accidentally vegan!)
- 120g (1 Packet) Fox's Mini Cookies (accidentally vegan!)
Cooking Directions
- Melt the butter, chocolate and golden syrup in a pan on a low-medium heat, stirring frequently.
- Line a 7-inch square tin with clingfilm.
- In a large mixing bowl, add the biscuits, jelly tots and cookies (or whatever you decide to use!).
- Pour the melted chocolate mixture into the mixing bowl, stirring to combine the ingredients.
- Pour the mixture into the tin, spreading it evenly across the tin, roughly levelling it.
- Transfer to the fridge and leave it to set for at least 2 hours.
- Cut into slices and enjoy!
